Stoneridge Ranch Shaved Corned Beef Irish NachosCorned Beef Irish Nachos

StoneRidge Ranch Corned Beef Irish Nachos are a wonderful twist on a family favorite while being quick and easy. 

Ingredients:

  • 1 1/2 pounds russet potatoes 
    • Clean and sliced into 1/2 inch rounds
  • 2 tablespoons olive oil 
  • 1/2 teaspoon dried rosemary
    • Crushed
  • Sea salt and black pepper 
    • To taste
  • 1 1/2 cup shredded sharp cheddar cheese
  • 1 cup of StoneRidge Ranch Deli Style Shaved Corned beef
    • Dice further if desired
  • 5 slices bacon
    • Cooked and chopped
  • 1/4 cup sour cream (optional)
  • 1/4 cup sliced green onions (optional)

Directions:

  • Preheat the oven to 450ºF. Line a baking sheet with parchment paper and set aside.
  • Place potato slices in a large bowl, and toss with olive oil, rosemary, thyme, sea salt, and black pepper. 
  • Place potatoes, single layer on a prepared baking sheet. 
  • Bake for 20 minutes, flip the potatoes and bake for an additional 20 minutes. They should be golden brown and slightly crispy. 
  • Sprinkle with one cup of shredded cheese, then add corned beef. Add the remaining cheese and bacon pieces. 
  • Return to the oven for 3 to 4 minutes or until the cheese is melty.
  • Garnish with your desired toppings.
